Elizabeth Lund

Elizabeth T. Lund, 95, died Friday, April 30, 2004, at Rosewood on Broadway, Fargo, ND.

Elizabeth Theresa Henkenius, daughter of Albert and Hedwig (Veit) Henkenius, was born in rural Antelope township, ND, on March 18, 1909. She grew up and received her education in rural Mooreton, ND. She worked several years for the Bagg Bonanza Farm, rural Mooreton, as a food server both in the dining room and the field.

Elizabeth was united in marriage to Clarence E. Lund, on December 26, 1941, in Mooreton. The couple made their home in Dwight, ND, Fargo, and eventually, Moorhead, MN. For five years they owned and operated Liz's Café in Sabin, MN. They later made their home in Wolverton, MN. Clarence died in 1975. Elizabeth enjoyed gardening, fishing and spending time with her grandchildren. She was a long time and active member of St. Francis de Sales Catholic Church, Moorhead.

Elizabeth is survived by one son, Ronald, Moorhead; three daughters, Gayle (Bernard) Pfau, Fargo, Judy (Steve) McFarlin, Starbuck, MN, and Muriel (Les) Nicholas, Fargo; 21 grandchildren; 32 great -grandchildren; two sisters, Dorothy Klosterman, Wahpeton, ND, and Francis (Jim) Waxweiler, Mantador, ND. She was preceded in death by her husband, one son, David; and her parents.
